Peach Tarte Tatin

- 8 peaches
- 8 oz brown sugar
- 1 1/2 tablespoons butter
For the pie pastry
5 oz flour
6 oz butter
7 oz sugar
4 tbsp water
For the pie pastry:
Combine the flour, sugar, softened butter and water in a bowl. Knead until you obtain a homogeneous ball and leave to rest in the fridge for 30 minutes.
Halve the peaches and remove the pits. Preheat the oven to 350°F (180°C).
Put the brown sugar and butter in the frying pan and heat to 2/3 of the maximum power of your stove.
When the sugar begins to brown, mix until it caramelizes and then add the halved peaches.
Lower the heat to 1/3 and cook for 5 minutes.
Roll out the dough and place it directly on top of the fruits in the frying pan, tucking in the edges.
Place the pan in the oven and bake for 35 minutes.
Attach two side handles to the pan and flip over onto a plate.
