Potato Dauphinoise

Serves 8



  • 12 cups potatoes
  • 17 fl oz milk
  • 5 fl oz heavy cream
  • 2 chopped garlic cloves
  • 1/2 tsp ground nutmeg
  • Salt




Preheat the oven to 320°F (160°C).


Peel and wash potatoes.

Cut the potatoes into 0.2 inch slices or thinner and place in a large bowl.

Add milk, cream, garlic, nutmeg, salt and mix for 2 minutes until the starch has been extracted from the potatoes and they are well-seasoned.

Pour into the CRISTEL® sauté pan and bake in the oven for 1 hour after removing the handles.

Serve directly in the baking dish
