Spinach, blue cheese and pine nuts quiche

Serves 4



  • 1 shortcrust pastry dough
  • 7 oz blue cheese
  • 9 oz fresh spinach leaves, washed
  • 1 cup heavy cream
  • 2 eggs
  • 1 tablespoon butter
  • 1 oz pine nuts
  • Salt & pepper


Preheat the oven to 350°F (180°C).

1/ Heat butter in the pan on low.

2/ Once the butter has melted, add the spinach and stir well for 30 seconds. Season.

3/ Drain the spinach to remove any water.

4/ Mix eggs and cream in a bowl.

5/ Place the dough in the pan and spread the spinach and diced blue cheese on top, then pour the cream & eggs mixture.

6/ Sprinkle with pine nuts and bake for 30 minutes.
