Zucchini tomato omelet

- 6 eggs
- 1/2 zucchini
- 1/2 chopped onion
- 5 cherry tomatoes
- 2 oz butter
- 1 teaspoon chopped rosemary
- Salt & pepper
Dice the zucchini into small cubes and halve the tomatoes.
Whisk the eggs in a bowl and season.
Heat the frying pan to 2/3 of the maximum power of your stove and add the butter and onion.
Brown for 2 minutes, then add the zucchini and cook for another 3 minutes.
Add the whisked eggs and the tomato halves and season with rosemary.
Continue cooking for 3 minutes and lower the heat to 1/3 and cover with a lid.
Cook for 2 more minutes and then remove the lid.
Let sit for 2 minutes and enjoy!
Tip: Add grated cheese for even more flavor.
