Preheat the oven to 350°F (180°C).
1 Prepare 3 separate plates, one with flour, one with beaten eggs, and one with breadcrumbs mixed with herbs.
2 Salt and pepper the codfish loin.
3 Roll the codfish loin in flour, then in egg, and finally in breadcrumbs.
4 Heat oil butter in the pan on medium.
5 Add the fish and brown for 2 minutes on each side.
6 Bake the pan in the oven for 8 minutes.
