Breaded fish with hazelnut and herbs
- 4 codfish loin, 5.3 oz
- 5 oz. flour
- 5 oz. breadcrumbs
- 2 eggs
- 1 teaspoon chopped parsley
- 1 teaspoon chopped tarragon
- 1 teaspoon chopped dill
- 1 teaspoon chopped chives
- Salt & pepper
- 1 teaspoon olive oil
- 1 1/2 tablespoons butter
Preheat the oven to 350°F (180°C).
1/ Prepare 3 separate plates, one with flour, one with beaten eggs, and one with breadcrumbs mixed with herbs.
2/ Salt and pepper the codfish loin.
3/ Roll the codfish loin in flour, then in egg, and finally in breadcrumbs.
4/ Heat oil butter in the pan on medium.
5/ Add the fish and brown for 2 minutes on each side.
6/ Bake the pan in the oven for 8 minutes.
