1 Heat butter in a sauté pan, then add the garlic and baby spinach.
2 Stir for 30 seconds, season and set aside in a salad bowl.
3 Add the Brocciu cheese and mix with a fork.
4 Place a sheet of lasagna at the bottom of the mini oven dishes, layering with the Brocciu cheese and spinach mixture, then add a layer of tomato sauce.
5 Repeat this operation twice.
Preheat the oven to 350°F (180°C).
6 Bake for 25 minutes.
Tip: If you cannot find any Brocciu cheese, you can substitute with Ricotta cheese.
