1 Melt the butter on medium heat in the pan until it takes on a hazelnut color. (approximately 20 minutes) Set aside.
2 Peel the apples and cut them into small wedges.
3 Put the superfine sugar in the frying pan and heat to 2/3 of the maximum power in order to make caramel.
4 Then, add the apples and simmer 10 minutes.
5 Mix flour, ground almonds, powdered sugar, and egg whites in a bowl, then add the browned butter.
6 Pour the mix over the caramelized apples and bake at 356°F for 25 minutes.
7 Let sit for 5 minutes and remove from the mold on a plate.
