1 Cut the chicken into cubes. Peel the avocados and cut into cubes.
2 In a bowl, combine the chicken, avocado and cilantro. Season.
3 On each tortilla, place two slices of cheddar then spread the chicken mixture in the center of each tortilla.
4 Roll up the tortillas to seal them.
5 Heat the frying pan over medium heat and brown the tortillas for 2 min on each side.
6 Cook for a further 15 min over low heat, turning regularly.
Tip: If you like the combination of sweet and savory, add cubes of mango to the mix
