Codfish with a bread crust and mustard sauce


  • 4 codfish loin, 5.3 oz
  • 2 slices of sandwich bread
  • 1 egg white
  • 1 finely chopped shallot
  • 2 tbsp mustard
  • 1 cup heavy cream
  • 1 tbsp olive oil
  • salt/pepper


1 Remove the crust from the bread and flatten each slice with a rolling pin. Cut each slice in half lengthwise.

2 Brush one side of the codfish with egg white and place a piece of bread on top. Season with salt and pepper.

3 Heat the frying pan to 2/3 of the maximum power of your stove and add a drizzle of olive oil.

4 Brown the codfish bread side down for 3 minutes, then turn. Brown the other side for 3 minutes then set aside.

5 In a frying pan, sweat the shallots for 2 to 3 minutes then add the mustard and the cream.

6 Simmer over low heat for 5 minutes then add in the codfish loins. Continue cooking for 5 minutes. Check for seasoning.

Tip: You can use slices of gingerbread instead of the sandwich bread.
