Preheat the oven to 250 °F
1 Marinate the filet mignon in soy sauce for half an hour.
2 Peel and dice the vegetables.
3 Heat the frying pan to 2/3 of the maximum power of your stove, and test the heat using the ‘water drop’ technique.
4 Brown the filet mignon on each side and set aside.
5 Brown the vegetables in the meat juices, then lower the heat to 1/3 of the power of your stove and cover the pan. Cook for 10 minutes.
6 Baste the filet mignon with honey and cover in seeds, then put the meat on top of the vegetables.
7 Transfer the pan to the oven and bake for 20 minutes.
Tip: Use the Cristel electronic temperature probe to achieve the perfect cooking time. For a slightly pink filet mignon: 147 °F (64 °C) at the heart of the meat, and for medium doneness, 150 °F (66 °C).
