Homemade Ketchup

Homemade Ketchup

 INGREDIENTS

  • 2 lb. and 3 oz of fresh or canned tomatoes
  • 1 red pepper
  • 1 red onion, minced
  • 1/3 cup of maple syrup or honey
  • 1 cup of red vinegar (balsamic if possible)
  • 1 tsp of mixed spices (Espelette, paprika, 4 spices...)
  • 1 tbsp olive oil


METHOD

 

Cut and seed the tomatoes and the pepper.

Heat the pan with some oil over medium heat and add the red onion.

Sweat for 5 min then add the tomatoes, pepper and vinegar.

Simmer over low heat and covered 45 minutes.

Pour the maple syrup or honey as well as the spices then simmer without lid for 30 minutes to evaporate liquids.

Mix in the blender and let cool, before filling our own bottle of ketchup with a funnel.

You can add 3 tbsp of soy sauce at the same time as the vinegar for a ketchup slightly more salty version of your ketchup.
