Leek and Goat Cheese Tarte Tatin


  • 1 puff pastry dough
  • 1 lb leeks, white part only
  • 8 oz honey
  • 7 fl oz white wine
  • 1 1/2 tablespoons butter
  • 8 oz of fresh goat cheese
  • Salt & pepper


1 Slice the leeks in 4 inch segments, then halve them lengthwise.

2 Heat the frying pan to 2/3 of the maximum power of your stove and add the honey and white wine.

3 When the mixture has browned slightly, add the butter.

4 Place the leeks in a harmonious circle and cook for about 10 minutes until there is no liquid left.

5 Turn off the heat and place the puff pastry dough over the leeks.

6 Using a knife, prick the dough and put the pan in the oven, preheated to 355 °F (180 °C) for 25–30 minutes.

7 Remove from the oven and wait for 2 minutes before turning over the tarte tatin into a serving dish.

8 Crumble the goat cheese onto the tarte tatin and enjoy with a salad.
