1 Place the powdered gelatin in a bowl of cold water to soften.
2 Put the cream and sugar in a CRISTEL pan and warm over a low heat.
3 Drain the gelatin and add to the cream, remove from heat and stir (do not whisk).
4 Add lime flavoring and lime zest.
5 Divide into 6 shot glasses and refrigerate for at least 2 hours.
6 Decorate with pieces of fruit just before serving.
