Lime Panna Cotta with Exotic Fruit
- 2 cups heavy cream
- 1/4 cup superfine sugar
- 1 tsp powdered gelatin
- 1 organic lime
- 3 drops lime flavoring
- 2/3 cup passion fruit pulp or other exotic fruits to decorate
1/ Place the powdered gelatin in a bowl of cold water to soften.
2/ Put the cream and sugar in a CRISTEL pan and warm over a low heat.
3/ Drain the gelatin and add to the cream, remove from heat and stir (do not whisk).
4/ Add lime flavoring and lime zest.
5/ Divide into 6 shot glasses and refrigerate for at least 2 hours.
6/ Decorate with pieces of fruit just before serving.
