Mixed red berry coulis
300g of mixed red berries or 1 sachet of frozen berries
150g of sugar cane syrup
Juice of half a lemon
Pass the fresh or frozen fruit through a potato ricer (smallest hole setting).
Weigh the fruit, there should be 300g.
Add the sugar cane syrup and the juice of 1/2 a lemon.
Mix everything together.
Chill the coulis before serving.
