Mouclade mussels


  • Mussels
  • Chives
  • White Wine
  • Shallots
  • Heavy cream
  • Salt and pepper
  • Butter


  1. Rinse the mussels in clean water
  2. In a sauté pan, sauté the shallots in a knob of butter
  3. Add the white wine
  4. Let the wine reduce for 2 minutes
  5. Add the mussels
  6. Cook for 5 minutes over low heat
  7. Drain the mussels, making sure that you keep the cooking liquid
  8. In a saucepan, reduce the cooking liquid with the heavy cream
  9. The mixture should reduce by half
  10. Season with salt and pepper
  11. Add the chopped chives
  12. Add the mussels back into the sauce
