
Peach Tarte Tatin
Ingredients
- 8 peaches
- 8 oz brown sugar
- 1 1/2 tablespoons butter
For the pie pastry
- 5 oz flour
- 6 oz butter
- 7 oz sugar
- 4 tbsp water
Recipe
For the pie pastry:
1 Combine the flour, sugar, softened butter and water in a bowl. Knead until you obtain a homogeneous ball and leave to rest in the fridge for 30 minutes.
2 Halve the peaches and remove the pits. Preheat the oven to 350°F (180°C).
3 Put the brown sugar and butter in the frying pan and heat to 2/3 of the maximum power of your stove.
4 When the sugar begins to brown, mix until it caramelizes and then add the halved peaches.
5 Lower the heat to 1/3 and cook for 5 minutes.
6 Roll out the dough and place it directly on top of the fruits in the frying pan, tucking in the edges.
7 Place the pan in the oven and bake for 35 minutes.
8 Attach two side handles to the pan and flip over onto a plate.
