Potato and lard cake


  • 2 lb potatoes
  • 1 chopped onion
  • 1 chopped garlic clove
  • 5 oz. diced thick-cut bacon
  • 1 egg
  • 2 tbsp flour
  • 1 tbsp Espelette pepper
  • Salt
  • Olive oil


1 Peel and grate the potatoes into a bowl.

2 Heat the frying pan to 2/3 of the maximum power of your stove, and test the heat using the ‘water drop’ technique.

3 Brown the bacon pieces, then add the potatoes, onion, garlic, egg, flour and Espelette pepper.

4 Stir well and season with salt.

5 Clean the frying pan and heat it again to 2/3 of your stove’s maximum heat.

6 Pour a tablespoon of olive oil and add 1/6 of the potato mixture. Shape it into a patty and brown for 2 to 3 minutes, then flip it.

7 Once both sides have been browned, repeat with the remainder of the potato mixture to make 6 cakes.

8 Bake for 15–20 minutes.

Tip: You can use the cakes as potato-based hamburger buns.
