Potato and lard cake

Serves 6

 

 INGREDIENTS

  • 2 lb potatoes
  • 1 chopped onion
  • 1 chopped garlic clove
  • 5 oz. diced thick-cut bacon
  • 1 egg
  • 2 tbsp flour
  • 1 tbsp Espelette pepper
  • Salt
  • Olive oil


METHOD

 

Peel and grate the potatoes into a bowl.

Heat the frying pan to 2/3 of the maximum power of your stove, and test the heat using the ‘water drop’ technique.

Brown the bacon pieces, then add the potatoes, onion, garlic, egg, flour and Espelette pepper.

Stir well and season with salt.

Clean the frying pan and heat it again to 2/3 of your stove’s maximum heat.

Pour a tablespoon of olive oil and add 1/6 of the potato mixture. Shape it into a patty and brown for 2 to 3 minutes, then flip it.

Once both sides have been browned, repeat with the remainder of the potato mixture to make 6 cakes.

Bake for 15–20 minutes.

Tip: You can use the cakes as potato-based hamburger buns.
