Ingredients

  • 2 lb 10 oz pumpkin flesh, diced
  • 1 chopped onion
  • 1 cup milk
  • 1 cup heavy cream
  • 2 egg
  • salt, nutmeg
  • 1 tablespoon olive oil

Recipe

Pumpkin gratin

Preheat the oven to 350°F (180°C).

 

1/ Heat the sauté pan on medium heat with olive oil.

2/ Add onions and brown them for 5 minutes, then add the diced pumpkin.

3/ Brown the pumpkin for 5–10 minutes, then remove from heat.

4/ Mix the eggs, milk and cream in a bowl and season.

5/ Pour the mixture over the pumpkin and bake for 35 minutes.
