Spinach, blue cheese and pine nuts quiche

Ingredients

  • 1 shortcrust pastry dough
  • 7 oz blue cheese
  • 9 oz fresh spinach leaves, washed
  • 1 cup heavy cream
  • 2 eggs
  • 1 tablespoon butter
  • 1 oz pine nuts
  • Salt & pepper

Recipe

Preheat the oven to 350°F (180°C).

 

1 Heat butter in the pan on low.

2 Once the butter has melted, add the spinach and stir well for 30 seconds. Season.

3 Drain the spinach to remove any water.

4 Mix eggs and cream in a bowl.

5 Place the dough in the pan and spread the spinach and diced blue cheese on top, then pour the cream & eggs mixture.

6 Sprinkle with pine nuts and bake for 30 minutes.
