1 Peel the sweet potatoes and cut into thin slices.
2 Heat the sauté pan on medium heat with butter. When the butter starts foaming, add the spinach and stir quickly for 30 seconds.
3 Strain them well in a colander.
4 Without turning on heat, place the sweet potato slices in the sauté pan, placing spinach between each layer.
5 In a bowl, mix eggs, milk and cream, then season.
6 Pour the mixture over the vegetables, then add slices of goat cheese.
7 Bake in the oven at 160 °C (320 °F) for about 45 minutes. Check if it is ready.
Tips: You can use a mixture of sweet potatoes and carrots.
