1 Place the flour, sugar, salt, eggs, melted butter and the yeast after diluting in warm milk in the bowl of the stand mixer.
2 Knead for 5 minutes, then cover with a tea towel and allow to rise for an hour and a half.
3 Spread the dough using a 0.4 inch (1 cm) rolling pin, then cut out circles of around 8 cm diameter.
4 Place a square of chocolate on top of each circle, using a variety of chocolates.
5 Fold the dough over the chocolate to make a ball and allow to rise for 30–45 minutes.
6 Heat the oil in the sauté pan to about 340 °F and cook the donut holes for 3–4 minutes on each side.
7 Place your donut holes on paper towels and sprinkle with sugar.
Tips: You can add flavor to your donut holes by adding vanilla extract to the dough.
