Preheat the oven to 350 °F (180 °C).
1 Mix the sausage meat, celery, chestnuts and cranberries in a bowl and add salt and pepper.
2 Stuff the turkey with the mixture, then place it on the rack of the oven dish.
3 Place in the oven for 2 1/2 to 3 hours.
4 Forty-five minutes before the end of the cooking time, add the potatoes to the dish, under the rack.
Tip: For more tender meat, poach the turkey for about 20 minutes before putting it in the oven
