Vanilla caramelized pineapple with pan-fried crumble
Ingredients
- 1 pineapple
- 1 passion fruit
- 1 vanilla bean
- 8 oz butter
For the crumble:
- 8 oz flour
- 8 oz sugar
- 8 oz ground almonds
- 8 oz sugar
Recipe
1 Mix all the Crumble ingredients in a bowl with your fingertips until the mixture becomes sandy in texture then set aside in the refrigerator for 30 min.
2 Peel the pineapple and cut into slices.
3 Heat the frying pan over medium heat, add the Crumble pieces and stir until nicely browned.
4 Remove the Crumble and add the sugar to the pan to caramelize it, then add the butter, stirring all the time.
5 Arrange the pineapple slices in the caramel and caramelize for 15 min over medium heat, adding the vanilla bean split in half.
6 At the end of cooking, add the passion fruit and serve along with the Crumble.
