Ingredients

  • 1 minced onion
  • 2 chopped garlic cloves
  • 1 red pepper cut into cubes
  • 30 oz crushed tomato
  • 8 oz cubed tofu
  • 3.5 oz of peas
  • 3 oz of olives
  • 2 tablespoons chopped parsley
  • 1 tsp of turmeric
  • 1 tsp of paprika
  • 2 tsps olive oil - Salt

Recipe

Vegan Shakshuka

1 / Heat the oil in the sauté pan over medium heat then add the onion and pepper.

2 / Make color 5 min and add the garlic with the spices then continue cooking 5 min.

3 / Add tomatoes and cook for 45 minutes over low heat. Stir occasionally.

4 / Finally, add Tofu, peas and olives and cook for another 5 minutes.

5 / Serve with a slice of toasted bread sprinkled with parsley.
