INGREDIENTS
- 1 bunch green asparagus
- 1 ripe avocado
- 1 finely chopped shallot
- Salt & pepper
- 1 tsp olive oil
- 2 tbsp sour cream
METHOD
Remove the base of the asparagus (the tough part) and cut the remainder into pieces.
Heat the CRISTEL® pan on medium heat with olive oil.
Sweat the chopped shallot and add the asparagus pieces.
Add water to twice the volume of asparagus and simmer for 20 minutes.
Remove from heat and add avocado, then blend.
Adjust seasoning and add sour cream.
