INGREDIENTS
- 200 g wheat flour
- 100 g buckwheat flour
- 3 eggs
- 25 cl milk
- 50 g melted butter
- 10 g baking yeast
- 1 pinch of salt
- 2 ripe avocados
- 100 g cottage cheese
- 3 slices of smoked salmon
- 20 g chia seeds
- Salt pepper
METHOD
Mix the egg yolks with lukewarm milk, yeast and salt.
Stir in the flour and add the melted butter.
Beat the egg whites and gently fold in the dough.
Heat the CRISTEL® pan to half the heat of the fire for 2 minutes and make small heaps using a spoon.
Cook 2 minutes on one side and do the same on the other. Reserve.
Peel the avocados and mix them with the fromage blanc. Season with salt and pepper.
Spread the avocado mousse blinis then add a small piece of salmon and sprinkle with chia seeds.
