INGREDIENTS
- 1 pork filet mignon
- 8 oz seed mixture (soy, almonds, sesame, etc.)
- 4 fl oz soy sauce
- 1 tablespoon honey
- 1 sweet potato
- 2 carrots
- 1 parsnips
- 2 round turnips
- Salt & pepper
METHOD
Preheat the oven to 250 °F
Marinate the filet mignon in soy sauce for half an hour.
Peel and dice the vegetables.
Heat the frying pan to 2/3 of the maximum power of your stove, and test the heat using the ‘water drop’ technique.
Brown the filet mignon on each side and set aside.
Brown the vegetables in the meat juices, then lower the heat to 1/3 of the power of your stove and cover the pan. Cook for 10 minutes.
Baste the filet mignon with honey and cover in seeds, then put the meat on top of the vegetables.
Transfer the pan to the oven and bake for 20 minutes.
Tip: Use the CRISTEL® electronic temperature probe to achieve the perfect cooking time. For a slightly pink filet mignon: 147 °F (64 °C) at the heart of the meat, and for medium doneness, 150 °F (66 °C).
