INGREDIENTS
- 2 lb thick salmon fillets
- 2 eggs
- 5 oz cornstarch
- 5 oz corn flakes
- 2 tablespoons olive oil
- Salt/pepper
METHOD
Cut the salmon into approximately 3/4 inch by 2 inch pieces (2cm by 5cm).
Take 3 wide bowls. Place the cornstarch in one, the beaten eggs in another, and the corn flakes that you have lightly crushed with your hand in the last bowl.
Start by rolling the salmon pieces in the cornstarch, then the beaten egg, and finally in the corn flakes.
Heat the frying pan to 2/3 of the maximum power of your stove for 1 min and add the oil, then brown the nuggets for 6 to 8 min, turning regularly.
