INGREDIENTS
- 4 large leeks
- 2 sweet potatoes
- 1 chopped onion
- 1 cup coconut milk
- 1 tablespoon olive oil
- Salt & pepper
METHOD
Wash and cut the leeks into rings.
Peel and dice sweet potatoes.
Heat the stock pot on medium with olive oil and brown leeks for 5 minutes.
Add the sweet potatoes and cook for a futher 5 minutes.
Pour coconut milk and add enough water to cover vegetables.
Cover the stock pot and cook for about 25 minutes, then blend.
Add salt and pepper to taste.
