Apricot-cherry pie

  • 1 cup almond flour
  • ½ cup shredded coconut
  • 2 eggs
  • 3 Tbsp granulated sugar
  • 1/3 cup milk
  • 1/3 cup heavy whipping cream
  • 8 apricots
  • 1 1/3 cup pitted cherries
  • 1 pie dough




Heat oven to 350F.

Cut in half and pit the apricots.

In a bowl, mix eggs, sugar, almond flour, coconut, milk, and heavy cream.

Roll the dough and transfer to Démoul’vite, arrange apricots and cherries on top of the dough.

Spread the egg mixture on the fruits.

Transfer to oven and bake for about 35 minutes.

Allow to cool 10 minutes before serving.


Tip: you can use the same recipe and substitute peach for apricots and raspberries for cherries.
