Moist apple and pear cake

Serves 6



  • 2 apples
  • 2 pears
  • 2 eggs
  • 5 oz flour
  • 5 oz sugar
  • 4 fl oz light cream
  • 4 fl oz milk



Preheat the oven to 180°C - 350°F (gas mark 4)


Peel and finely slice the apples and pears using a mandoline slicer.

Mix together the eggs, sugar, flour, milk and cream in a bowl.

Add the sliced fruit to the previous mixture and coat well.

Pour into the frying pan, arrange the sliced fruit, and cook in the oven for 30 minutes.
