Turkey stuffed with chestnuts and cranberries

- One 9 lb turkey
- 3 lb 5 oz sausage meat
- 7 oz cooked chestnuts
- 5 oz cranberries
- 1 celery stalk, chopped
- 3 lb 8 oz new potatoes
- Salt & pepper
Preheat the oven to 350 °F (180 °C).
Mix the sausage meat, celery, chestnuts and cranberries in a bowl and add salt and pepper.
Stuff the turkey with the mixture, then place it on the rack of the oven dish.
Place in the oven for 2 1/2 to 3 hours.
Forty-five minutes before the end of the cooking time, add the potatoes to the dish, under the rack.
Tip: For more tender meat, poach the turkey for about 20 minutes before putting it in the oven
