Vegan Shakshuka

Vegan Shakshuka

Preparation time: 20 min
Cooking time: 50 min
Serves 6

 

 INGREDIENTS

  • 1 minced onion
  • 2 chopped garlic cloves
  • 1 red pepper cut into cubes
  • 30 oz crushed tomato
  • 8 oz cubed tofu
  • 3.5 oz of peas
  • 3 oz of olives
  • 2 tablespoons chopped parsley
  • 1 tsp of turmeric
  • 1 tsp of paprika
  •  2 tsps olive oil - Salt

 


METHOD

 

Heat the oil in the sauté pan over medium heat then add the onion and pepper.

Make color 5 min and add the garlic with the spices then continue cooking 5 min.

Add tomatoes and cook for 45 minutes over low heat. Stir occasionally.

Finally, add Tofu, peas and olives and cook for another 5 minutes.

Serve with a slice of toasted bread sprinkled with parsley.
