- 2 lb 10 oz pumpkin flesh, diced
- 1 chopped onion
- 1 cup milk
- 1 cup heavy cream
- 2 egg
- salt, nutmeg
- 1 tablespoon olive oil
Preheat the oven to 350°F (180°C).
Heat the sauté pan on medium heat with olive oil.
Add onions and brown them for 5 minutes, then add the diced pumpkin.
Brown the pumpkin for 5–10 minutes, then remove from heat.
Mix the eggs, milk and cream in a bowl and season.
Pour the mixture over the pumpkin and bake for 35 minutes.
