Chicken, avocado and cheddar wrap

Serves 6

 

 INGREDIENTS

  • 6 wholemeal tortillas
  • 4 chicken breasts
  • 2 avocados
  • 12 cheddar slices
  • 1 tbsp chopped cilantro
  • salt/pepper


METHOD

 

Cut the chicken into cubes. Peel the avocados and cut into cubes.

In a bowl, combine the chicken, avocado and cilantro. Season.

On each tortilla, place two slices of cheddar then spread the chicken mixture in the center of each tortilla.

Roll up the tortillas to seal them.

Heat the frying pan over medium heat and brown the tortillas for 2 min on each side.

Cook for a further 15 min over low heat, turning regularly.

Tip: If you like the combination of sweet and savory, add cubes of mango to the mix
