Sweet potato, spinach and goat cheese au gratin

- 800 g sweet potato
- 500 g baby spinach
- 1 goat cheese log
- 25 cl liquid cream
- 25 cl milk
- 1 egg
- 10 g (2 teaspoons) butter
- Salt & pepper
Peel the sweet potatoes and cut into thin slices.
Heat the sauté pan on medium heat with butter. When the butter starts foaming, add the spinach and stir quickly for 30 seconds.
Strain them well in a colander.
Without turning on heat, place the sweet potato slices in the sauté pan, placing spinach between each layer.
In a bowl, mix eggs, milk and cream, then season.
Pour the mixture over the vegetables, then add slices of goat cheese.
Bake in the oven at 160 °C (320 °F) for about 45 minutes. Check if it is ready.
Tips: You can use a mixture of sweet potatoes and carrots.
