Duck breast with apples and cider

Preparation time: 15 min
Cooking time: 20 min
Serves 4

 

 INGREDIENTS

  • 2 duck breasts
  • 2 apples
  • 5 fl. oz. cider
  • 1 tbsp. brown sugar
  • salt & pepper


METHOD

 

Preheat the oven to 300°F

Score the skin of the duck breasts to create a diamond pattern.

Heat the frying pan to 2/3 of the maximum power of your stove and test the heat using the 'water drop' technique.

Place the duck breasts skin side down and reduce the heat to medium.

Brown the duck breasts for 5 min on the skin side and turn and brown for 1 min on the other side.

Remove the duck breasts and add the apples cut into quarters.

Add the tablespoon of sugar and caramelize the apples.

Add the duck breasts back to the pan and cook in the oven for 15 min.

Remove from the oven, deglaze the pan with the cider and season.
