Breaded fish with hazelnut and herbs

- 4 codfish loin, 5.3 oz
- 5 oz. flour
- 5 oz. breadcrumbs
- 2 eggs
- 1 teaspoon chopped parsley
- 1 teaspoon chopped tarragon
- 1 teaspoon chopped dill
- 1 teaspoon chopped chives
- Salt & pepper
- 1 teaspoon olive oil
- 1 1/2 tablespoons butter
Preheat the oven to 350°F (180°C).
Prepare 3 separate plates, one with flour, one with beaten eggs, and one with breadcrumbs mixed with herbs.
Salt and pepper the codfish loin.
Roll the codfish loin in flour, then in egg, and finally in breadcrumbs.
Heat oil butter in the pan on medium.
Add the fish and brown for 2 minutes on each side.
Bake the pan in the oven for 8 minutes.
