1 Heat the milk in the pan over low heat. Reduce the milk by 1/3.
2 Turn off the heat and place a dishcloth over the pan and leave to cool to 113°F (45°C) (Use a thermometer)
3 Add the yogurt and mix well.
4 Divide the mixture into 6 glass pots.
Preheat the oven to 130°F (55°C)
5 Wash the pan and place the yogurt pots inside, then add lukewarm water to reach halfway up the sides of the pots.
6 Place in the oven for 20 min then switch off and leave for 5 hours in the closed oven.
7 Chill for a few hours.
Tips: You can add vanilla to your yogurt mixture or add fruit preserves just before serving.
