Zucchini tomato omelet

Zucchini tomato omelet


  • 6 eggs
  • 1/2 zucchini
  • 1/2 chopped onion
  • 5 cherry tomatoes
  • 2 oz butter
  • 1 teaspoon chopped rosemary
  • Salt & pepper


1 Dice the zucchini into small cubes and halve the tomatoes.

2 Whisk the eggs in a bowl and season.

3 Heat the frying pan to 2/3 of the maximum power of your stove and add the butter and onion.

4 Brown for 2 minutes, then add the zucchini and cook for another 3 minutes.

5 Add the whisked eggs and the tomato halves and season with rosemary.

6 Continue cooking for 3 minutes and lower the heat to 1/3 and cover with a lid.

7 Cook for 2 more minutes and then remove the lid.

8 Let sit for 2 minutes and enjoy! 

Tip: Add grated cheese for even more flavor.
